Step-by-step instruction keeps everything approachable, whether you’re brand new to dumpling-making or already comfortable in the kitchen. As your first batch steams, you’ll mix a simple dipping sauce with soy sauce, honey, sesame oil and rice vinegar, learning how to balance salty, sweet, tangy and nutty flavors. Then you’ll add shrimp paste to the remaining filling and use it to create shumai-style dumplings, giving you another shape and technique to take home to your own kitchen.
